Monique and Tim were fortunate enough to get their hands on a farm with some of the most exciting vinyards in Adelaide Hills. Roughly 5 parcels planted in 1994 with Savagnin, Garganega, Chardonnay, Sauvignon Blanc, Pinot Noir and a bit of Cabernet Franc+Sauvignon. The solis are perfect for winemaking, and even have quartz running through the vineyard. This yields a potential for very precise minerality - something that Tim and Monique achieve in spades (especially in their Savagnin/Chadonnay blend 'High Paradise'!).
Tim originally set out to be a chef, which ended up leaving him a desire to know more about growing things. Monique is originally from New Zealand and she grew up as the daughter of James and Annie; winemakers from the first biodynamically certified vineyard in NZ!
Everything at Manon is done with utmost care. Biodynamic in essence and natural in philosophy. This means using homemade treepastes and biodynamic preparations instead of chemicals the vineyards, viewing the farm as a closed circuit living organism where all plants and animals play a vital role - and once the grapes come in to the winery, no remedies of any kind are utilized.
In the end, once the wine is in bottles, those bottles contain nothing but fermented organic grapes.
Oh, and Tim and Monique are officially the nicest people ever to have set foot on Dansih soil. Something we witnessed in May 2018, when they flew all the way to Copenhagen - with their newborn baby! - to participate in our biannual FRI'VIN event!!!
